FEATURED CHEFS

Wayne Brooks

Chef & Owner, 827Ray's Kitchen & Cellar

Chef Wayne Brooks, formerly executive chef at the University of Texas Golf Club and a top-ten winner of the Chaine des Rotisseurs national Young Chef competition, wanted to bring modern French cuisine and a sophisticated and elegant dining experience closer to home. In 2015, Chef Brooks was proud to bring his vision to life in 827Ray’s Kitchen + Cellar. Named for Chef Brooks’ two boys, the restaurant was built on the pillars of high-quality ingredients and impeccable service.

Peter Maffei

Executive Chef, Cannon + Belle

Chef Maffei enjoys presenting the simplicity of each dish, intriguing the diner by accenting vibrant flavors and focusing on seasonal local ingredients. While he is a master with steaks and seafood, Maffei has a deep appreciation for the versatility of produce. His dishes are influenced by his countless trips to New York’s famous Union Square Farmers Market, as well as the great Texas produce he has come to love since moving to Austin in 2008.

Robyn Mayo

Executive Pastry Chef, The Carillon

Chef Mayo brings a wealth of skills and experience in the culinary world to The Carillon as pastry chef. Mayo has held positions at the Ambrosia on Huntington, Garde Manger kitchen at The Ritz-Carlton Palm Beach, Black Fin Chophouse and Raw Bar in Boston, and most recently at H&F Bread Co. in Atlanta, where she was named “Top Artisan Baker” by Dessert Professional Magazine. She's been showcasing her skills in pastry, bread, fine dining and larger events at the AT&T Executive Education and Conference Center and The Carillon team since 2014.

Zach Hunter

Chef de Cuisine, Fixe

Chef Hunter’s fresh ideas, appreciation for quality products, and progressive fine dining experience are a perfect fit for the Fixe menu, which marries traditional Southern dishes with modern technique and locally sourced ingredients. He’s also extremely instrumental in Fixe’s cocktail program, working with the bar team to develop the recipes and ingredients for the acclaimed bar program.

Stephen Bonin

Executive Chef, Geraldine's

Growing up hunting and fishing in Southeast Texas, Chef Bonin has always had an appreciation for high quality, fresh ingredients. In fact, he accredits his interest in pursuing a career in the culinary industry to the time he spent cleaning and cooking the game he hunted as a child. Bonin's vast experience working in well-respected restaurants, coupled with his Texas roots, makes him a perfect match for Geraldine’s and their culinary direction.

Amir Hajimaleki

Executive Chef & Owner, Oasthouse Gastropub

Chef Amir comes from a strong line of cooks.  His middle eastern heritage combined with diverse experience has helped him both as a chef and restaurateur. His passion for cooking started early on, cooking in the kitchen with his mom and grandmother at the age of 5 in Iran.  Growing up in Austin, the passion for cooking just became stronger.  At Oasthouse, Amir and his brother Ali focus on European elevated pub cuisine with a Texas spin – combined with a large variety of craft beers and truly craft cocktails while keeping the philosophy of supporting local farms and businesses.

Brandon Kissinger

Chef, Rebel Pizza Bar

When you’re surrounded by some of the best graffiti art in Austin, right in your own restaurant, inspiration abounds for Pizza Master Brandon Kissinger. Nominated as one of the Best New Restaurants by CultureMap Austin, the restaurant has also earned a consistent 4-star rating on YELP over the past 12 months - ensuring a great experience for pizza aficionados.

Mario Rodriguez

Chef, Redfin Seafood Kitchen

At Redfin, you will feel the authentic vibe of Austin's downtown flair coupled with upscale menu items that are presented in a fun and family friendly atmosphere. Chef Rodriguez proudly presents original lunch and dinner "specials" that could potentially find their way to the permanent menu. In addition, he never forgets to feature uniquely-designed, signature desserts that will steal your heart every time.

Angel Begaye

Pastry Chef, Trace

Inspired by her family, Pastry Chef Begaye sites early experiences cooking with her grandmother as a foundation for her love of food. Begaye brings a renewed excitement about fine pastry to the already stellar TRACE team, adding her own creative and innovative touch while maintaining focus on well balanced flavors.
